MACROWINE 2021: June 23rd-30th, 2021. Save the date!

Lallemand Oenology is glad to sponsor the 2021 edition of Macrowine, the international scientific conference on macromolecules and secondary metabolites of grapevine and wine. The event will be held virtually from June 23rd to 30th 2021. 

With the aim of providing a high-quality experience to all participants, Macrowine2021 will be offering a mix of pre-recorded, live presentations and interactive roundtables, to discuss advances, challenges and future directions in the global wine research.

Among the renowned invited speakers, Giovana Girardi Piva, PhD student at INRAE UMR SPO in Montpellier, France, and Fanny Bordet, PhD student at the Institut de la Vigne et du Vin - Jules Guyot in Dijon, France, will be presenting their research works orally during the event.

Giovana will present her research conducted on 27 strains of Saccharomyces cerevisiae which highlights the role played by phytosterols and ergosterol in wine alcoholic fermentation, to ensure yeast grow growth and avoid sluggish and stuck fermentations. 

And Fanny will present her work on the intraspecies differentiation of Saccharomyces cerevisiae yeasts by metabolomic signature and sensory patterns in wine, showing that the final composition of the wine is intimately linked to the specific production of metabolites by each strains of S. cerevisiae.
